LiuBiJiu Sauce Garden is located in Beijing, China, and is said to have been founded in the mid-Ming Dynasty. The golden plaque hanging inside the LiuBiJiu store is said to have been inscribed by Yan Song, a grand chancellor of the Ming Dynasty. LiuBiJiu originally started as a small shop founded by the Zhao brothers, Zhao Cunren, Zhao Cunyi, and Zhao Cunli, from Xidu Village in Linfen, Shanxi, specializing in selling firewood, rice, oil, salt, and sauce. There’s a saying: “Seven things to open the door: firewood, rice, oil, salt, sauce, vinegar, tea.” These seven items are essential in people’s daily lives. The Zhao brothers’ small shop was named LiuBiJiu because it didn’t sell tea.
LiuBiJiu Sauce Garden was established in the ninth year of the Jiajing era of the Ming Dynasty (1530 AD) and, as of 2023, has a history of 493 years. It is one of the oldest and most renowned time-honored brands in Beijing. It includes “LiuBiJiu” with 493 years of history, “Guixinzhai” with over 270 years of history, and “Tianyuan” with over 130 years of history. LiuBiJiu Sauce Garden is located at No. 3 Liangshi Street in Qianmen, with its storefront being a traditional Chinese wooden structure that was rebuilt in 1994, still maintaining its ancient architectural style.
The “LiuBiJiu” golden plaque hanging in the LiuBiJiu store was created by the hand of Yan Song, the grand chancellor of the Ming Dynasty. Despite several disasters, this plaque remains well-preserved and has become a rare treasure. The meaning of LiuBiJiu is: sorghum and rice must be of high quality, fermentation must be successful, the brine must be clear, ceramics must be excellent, the cooking time must be just right, and the spring water must be fragrant. The “six necessities” can be explained in terms of production and processing techniques: the ingredients must be top-notch, processing must be truthful, the production process must be clean, the cooking time must be precise, equipment must be excellent, and the spring water must be pure and fragrant.
Today, Beijing LiuBiJiu Food Co., Ltd. is a professional company that specializes in the production of pickled vegetables and seasonings. The annual production capacity of the company’s pickled vegetable products exceeds 20,000 tons, with sales exceeding hundreds of millions of yuan and profits and taxes reaching nearly ten million yuan. In the wave of economic reform, the company has experienced rapid development.
In December 2000, the company completed its restructuring, transforming from a purely state-owned management company into a joint-stock company with 12 shareholders, with a net asset value of over 40 million yuan. The sales branches of LiuBiJiu Food Co., Ltd. and Lidaju Seasoning Co., Ltd. are spread throughout Northeast China, North China, Northwest China, Jiangnan, and other regions of China. The products are also sold to countries and regions such as Japan, Singapore, Australia, the United States, and Europe, receiving widespread acclaim from Chinese and international consumers.
In the outskirts of Beijing, a factory covering 20 acres with an area of 8,000 square meters has been completed and put into use. It boasts a state-of-the-art modern production line in China, a company technical research institute, and a team of many engineering and technical personnel, laying a solid foundation for the long-term development of the company.
In November 2019, China’s “List of National-level Representative Projects for the Protection of Intangible Cultural Heritage” was announced, and Beijing LiuBiJiu Food Co., Ltd. was awarded the qualification as a “Preservation Unit for the Craftsmanship of Pickled Vegetables (LiuBiJiu Pickled Vegetable Making Technique)” project.
